Rear: 19x11 +35

And if so, what size tire should I run for the stretched look???

235 or 245 for the front and 265 or 275 for the rear.

That won't matter. You need to just measure the back spacing and the distance from the mounting surface to the fenders outer lip...or where ever you would like it to end up at. Then you figure out your offset from there depending on your brake caliper clearance and which disk/pad will work best for your set-up. These numbers aren't majic and they always vary on peoples tastes and the spoke design of the wheel you want. There's many factors.
