So i had some leftover cream and spaghetti last night so i decided to make a Carbornara. I had experimented with this sauce before, but last night i stumbled on the Jackpot. One of the creamiest and tastiest carbonara's i've had and it took less than 30 minutes because i already had some cooked spaghetti. The secret was the canned mushrooms and using egg yolks separated from the whites

Dom's Spaghetti Carbonara
Serves: 2 (decent portions)
Calories: I lost count

Ingredients
220g (8oz) Can of sliced mushrooms in butter sauce
150ml (5fl.oz) cream
2 egg yolks (from large eggs)
1 tbsp parmesan cheese
a decent sprinkling of black pepper
a pich mixed italian herbs

250g (9oz/half packet) spaghetti, cooked to al-dente
170g (6oz) Bacon pieces (a handful at the Deli)
1 tsp chopped garlic
(can double ingredients for more servings)

Instructions
Cook Spaghetti, keep aside
In a mixing bowl, add egg yolks & cream and whisk until smooth with a fork
fold in parmesan cheese, pepper and herbs
add contents of can of mushrooms, mix until smooth (with a fork)

Add a tbsp of olive oil to a frying pan and when hot, add the bacon bits.
Fry on high heat until bacon is crackling and 'popping' (i had a splash shield over the pan to avoid mess/injuries)
turn off heat and spoon bacon into a separate bowl (leave oil in the pan)
Put low heat on and add garlic to the pan
When that starts to brown slightly (15-30 seconds), add the spaghetti and toss to mix oil and garlic throughout the spaghetti
Add bacon bits and stir again
Finally pour in the sauce, and mix well until nice and hot
Serve right away.

Lemme know what you think? Maybe no benefit over the ready-made pasta sauces, but its really satisfying and i think it tastes better. :D

Ah, sorry... Carbonara is the white creamy bacon pasta sauce. Pics wouldnt do the meal justice, and it was gone pretty quickly :D

I was a bit excited because it was the first meal i have cooked from my own recipe that actually turned out very tasty. My daddy would be so proud!

i bbq'ed sunday after church and before NFL kickoff. i bbq all the damn time and i enjoy it :)

I gotta get some Vietnamese bbq recipes. I love cooking Nam skewers (not sure if thats the right name - its the pork with sweet fish sauce

Then there is the way they marinate their meat... I always love going to my viet buddies' place for bbq!

And BoOsty, post up your browny recipe's LOL, i'mma change the title of this thread to be the vipstylefood recipe thread!

Im a Homebrewer and If you want to brew beer, heres a Nut Brown ale extract recipe I tweaked by adding honey to make it a honey nut brown:

Robust Honey Nut Brown Ale:

5 gallon batch

8 lbs English Light LME
3 lbs Orange Blossom Honey @ 45 min (60 min Boil)

Steeping grains:
----------
8 oz Crystal 60 L
8 oz Caravienne
4 oz Victory
4 oz Chocolate

Hops:
------------
1 oz Magnum @ 60 min
2 oz Willamette @ 10 min
2 oz Kent Goldings @ 1 min

I used WLP004 Irish Ale Yeast, But WLP002 or WLP001 would work fine.

where do you go about getting these ingredients??*

also when you grill chicken, how do you cook it so that its moist and fully done?* whenever i grill chicken, the outside looks fine but the center near the bone is raw.* sometimes illl cook it long enough to get it FULLY done but then the meat is too dry.

those beer ingredients can be had at a homebrew store or try www.morebeer.com or www.northernbrewer.com

If you got 4 hours out the day to brew and can wait like about 3 weeks, you will have 5 gallons of good beer :D


Here is how I bbq chicken. Wrap it in foil with all the spices that you want to flavor induce the chicken with. Cook it in that foil for about 30-45mins, depending on how hot the grill is. Try covering the lid, so it retains a lot of heat. Take it out the foil and grill the chicken for about 2.5 mins on each side (should be fully cooked by then), just enough to get grill marks and the good charcoal taste. You can re-flavor it also if you like bbq sauce during that grill time. Try it out, see if it works for you. Works for me and my chicken is juicy. This method also works for ribs, just a longer cooking time. ;)

For chicken wings, I just grill them 8-10mins each side.

you also wrap the wings in foil?

for ribs, i boil it in water prior to tossing it on the grill. i boil it and kind of let it sit in boiling water for a while (this is so the meat falls right off the bone when you eat it later..its a secret shhh), then i take it out and toss it on the grill. the ribs are already cooked but i toss it on the grill to get the mesquite/smoked flavor onto the meat so it shouldn't be on the grill that long. oh id say leave it on the grill for a good 3-5 min but don't put it over direct heat. put it on the sides of the grill. then take it out and cover it in whatever sauce you want.

ive always wanted to do brisket but that takes too long (6 hrs or so).

i just grill them, no foil used on the wings.

I dont like to boil ribs because all the stuff goes into the water. I like to put it in foil because it cooks in its own juices, which tastes better in my opinion. Meat comes off the bone as well. Plus you can take the juices and make a sauce. Put it on a pan, add water/redwine, spices, a touch of flour to thicken it a bit and reduce. :D

actually you're right b/c when you wrap the ribs in foil and cook it long enough, it steams itself and makes it soft. NICE! good thinking
